Ingredients

Directions

  1. Peel and thinly slice the russet potatoes using a mandoline or sharp knife.
  2. In a large bowl, toss the potato slices with melted butter, salt, and pepper to coat evenly.
  3. Heat a large ovenproof nonstick skillet over high heat and add a bit more butter to coat the pan.
  4. Spread the potatoes in an even layer in the skillet, pressing down firmly with a spatula to form a compact pancake shape.
  5. Cook on the stovetop for about 6 minutes, pressing down occasionally, until the bottom is golden brown and crisp.
  6. Slide the galette onto a plate, place the skillet over the plate, and invert it back into the pan to cook the other side.
  7. Cook for another 4 minutes on the stovetop until the second side is golden.
  8. Transfer the skillet to a preheated 425ðF (218ðC) oven and bake for 10 minutes to ensure the potatoes are fully cooked and crisp.
  9. While the galette bakes, mix the crème fraîche, minced shallots, lemon juice, salt, and pepper in a small bowl.
  10. Transfer the hot potato galette to a serving platter.
  11. Spread the dill crème fraîche mixture evenly over the top of the hot galette.
  12. Arrange the thinly sliced smoked salmon over the cream, drizzle with olive oil, and garnish with salmon caviar, fresh chives, and a squeeze of lemon.
  13. Cut into quarters and serve immediately.
