Description

Poutines Rapees are a beloved Acadian comfort food, featuring soft, doughy potato dumplings encasing a savory core of seasoned salt pork. This hearty dish balances the earthy richness of grated and mashed potatoes with the salty, fatty depth of cured pork. Traditionally boiled until tender, they offer a unique texture that is both smooth and substantial. While often served as a main course with butter, they can also be enjoyed sweet with molasses or sugar. Perfect for family gatherings or cold winter evenings, this recipe preserves the authentic rustic charm of New Brunswick cuisine, delivering a nostalgic taste of heritage in every bite.

Ingredients

Directions

  1. Soak the salt pork in cold water overnight to remove excess salt, then drain and cut into small cubes.
  2. Place the finely grated potatoes in a clean cotton bag or cheesecloth and squeeze vigorously to extract as much water as possible.
  3. In a large bowl, combine the drained grated potatoes with the cooked mashed potatoes.
  4. Season the potato mixture generously with salt and pepper to taste.
  5. Roll the potato mixture into smooth balls, roughly the size of small snowballs.
  6. Make a small indentation in the center of each potato ball and insert one tablespoon of the cubed salt pork.
  7. Carefully close the hole around the pork filling to seal it inside the potato dough.
  8. Lightly roll each filled dumpling in flour to prevent sticking.
  9. Bring a large pot of salted water to a rolling boil.
  10. Gently drop the poutines into the boiling water, two or three at a time, ensuring the water returns to a boil quickly.
  11. Reduce heat slightly to maintain a gentle simmer and cook for 2 to 3 hours, skimming off any foam that rises to the surface.
  12. Remove the cooked poutines with a slotted spoon and drain well.
  13. Serve hot with butter, salt, and pepper, or as a sweet treat with sugar and molasses.
