Description

These Prune Buns are a comforting treat that combines the richness of a sweet dough with the deep, fruity flavor of prunes. The soft, pillowy buns are filled with a warm, spiced prune mixture, creating a delightful contrast in texture. Perfect for breakfast, brunch, or an afternoon tea, they smell incredible while baking. While labeled Vietnamese-style here, the technique is classic American comfort baking. They are best enjoyed warm from the oven, perhaps with a cup of coffee or tea. A wonderful way to use up dried fruit and bring a touch of nostalgia to your kitchen.

Ingredients

Directions

  1. Dissolve yeast and 1 teaspoon sugar in 1 cup of warm milk (scalded and cooled) along with 2 cups of flour to create a sponge.
  2. Beat the sponge mixture until smooth, then cover and let it rise in a warm place overnight or until light and bubbly.
  3. In a large bowl, cream together 1 cup of sugar and softened butter (or substitute) until fluffy.
  4. Beat in 3 eggs, 2 teaspoons of salt, and 1 cup of warm milk (scalded and cooled) into the sugar-butter mixture.
  5. Stir the risen yeast sponge into the wet ingredients until well combined.
  6. Gradually add 6 cups of flour, one cup at a time, mixing until a soft dough forms that is just manageable to handle.
  7. Turn dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  8. Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in bulk, about 1-2 hours.
  9. Punch down the dough and turn it out onto a lightly floured board.
  10. Divide the dough into 6 equal portions and shape each into a smooth ball.
  11. Place the shaped buns on a well-oiled or parchment-lined baking sheet, spacing them apart.
  12. Cover the buns loosely and let them rise again until they are nearly tripled in size, about 45-60 minutes.
  13. While buns rise, prepare the filling by heating prune preserves or stewed prunes with a splash of water until warm and spoonable.
  14. Use the handle of a wooden spoon or a small knife to make a deep hole in the center of each risen bun.
  15. Fill each hole generously with the warm prune mixture.
  16. Preheat oven to 450&# 194;°F (230ðC).
  17. Bake the buns immediately for 15-20 minutes, or until golden brown and cooked through.
  18. Remove from oven and let cool on a wire rack for 5 minutes.
  19. Dust tops with powdered sugar before serving warm.
