Description

These versatile Danish pastry envelopes offer a delightful choice between savory and sweet. The buttery, flaky dough wraps around a center of melted cheese or rich prune filling, creating a perfect bite-sized treat. Whether served as an appetizer with wine or a dessert with coffee, these pastries are impressive yet simple to assemble. The final brush of hot apricot glaze adds a beautiful sheen and a hint of fruity sweetness that complements both fillings beautifully. They are best enjoyed fresh from the oven while the pastry is still warm and crisp.

Ingredients

Directions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. On a lightly floured surface, roll out the Danish pastry dough until it is approximately 1/8 inch thick.
  3. Use a knife or pastry cutter to cut the dough into uniform 4-inch squares.
  4. Place about one teaspoon of your chosen cheese or prune filling in the center of each square.
  5. Fold two opposite corners of the dough over the filling, allowing them to overlap slightly in the center.
  6. Gently pinch the edges of the dough together to seal the envelope securely, ensuring the filling won't leak during baking.
  7. Place the assembled pastries on baking sheets, ensuring they are well apart to allow for spreading.
  8. Chill the pastries in the refrigerator for about 15 minutes to prevent shrinkage.
  9. Whisk together egg yolk and a splash of cream to create an egg wash.
  10. Brush the chilled pastries all over with the egg yolk mixture for a golden finish.
  11. Place the baking sheets in the preheated oven and bake the small pastries for the first 10 minutes.
  12. Reduce the oven temperature to 375 degrees Fahrenheit (190 degrees Celsius).
  13. Continue baking for another 10 to 15 minutes, or until the pastries are puffed and golden brown.
  14. While the pastries bake, prepare the apricot glaze by heating 1 cup of sieved apricot jam in a saucepan until boiling.
  15. Stir in 2 to 4 tablespoons of cognac, kirsch, applejack, or another liqueur of your choice if desired.
  16. Immediately upon removing the pastries from the oven, brush them generously with the hot apricot glaze.
  17. Allow the glaze to set slightly before serving the warm envelopes.
