Puchero is a traditional Mexican stew that offers a comforting blend of savory and sweet flavors. This dish features a robust broth made from simmering chicken, beef, lamb, and veal, which infuses the liquid with deep, rich notes. The stew is packed with hearty ingredients like chickpeas, potatoes, sweet potatoes, and carrots, providing a satisfying texture. Unique to this recipe is the addition of fruits such as pears, peaches, and barely ripe bananas, which add a subtle sweetness that balances the savory meats. Often compared to the French Pot-au-Feu, Puchero is best enjoyed on cold days or as a leftover meal, as the flavors meld and improve over time. It is a nourishing, home-style dish that brings warmth and complexity to the table, perfect for sharing with family and friends.

Ingredients

Directions

  1. Place the chicken, beef, lamb, and veal knuckle in a large stockpot.
  2. Add chicken broth and enough water to cover the meats by two inches.
  3. Bring to a boil, then reduce heat and simmer gently for 1 hour to develop the broth.
  4. Skim off any foam or impurities that rise to the surface.
  5. Add the chickpeas, white potatoes, sweet potatoes, carrots, turnips, and cabbage.
  6. Season with salt, pepper, crushed coriander seeds, and garlic cloves.
  7. Continue simmering for 45 minutes until the root vegetables are tender.
  8. Add the zucchini, corn kernels, and ham pieces.
  9. Simmer for another 15 minutes until the zucchini is cooked but still holds its shape.
  10. Gently stir in the sliced pears, peaches, and barely ripe bananas.
  11. Heat through for 5 minutes, allowing the fruit to soften slightly without disintegrating.
  12. Remove the large pieces of meat from the pot and shred them if desired.
  13. Return the meat to the stew or serve separately alongside the vegetables and broth.
  14. Squeeze fresh lime juice over each serving before eating.
