Directions
-
Preheat oven to 350&# 194;°F (177ðC).
-
Butter a 9-by-5-by-3-inch loaf pan thoroughly.
-
Trim and discard all crusts from the bread, then cut the remaining bread into 1 1/2-inch cubes.
-
In a large bowl, whisk together half-and-half, eggs, pumpkin puree, sugar, vanilla extract, ground ginger, ground cinnamon, ground cloves, and salt until well combined.
-
Add the cubed bread and raisins to the egg mixture, stirring gently to ensure all pieces are coated.
-
Let the mixture stand for about 5 minutes until the bread absorbs most of the liquid.
-
Transfer the soaked bread mixture into the prepared loaf pan, pressing down gently.
-
Bake for 35 to 40 minutes, or until the pudding is firm to the touch and set in the center.
-
While the pudding bakes, prepare the Ginger Sauce.
-
In a small saucepan, combine half-and-half and chopped fresh gingerroot; heat to a boil.
-
In a medium bowl, beat together egg yolks and sugar until pale.
-
Slowly beat the hot half-and-half mixture into the yolk mixture to temper the eggs.
-
Pour the combined mixture back into the saucepan.
-
Cook over low heat, stirring constantly, until the sauce thickens slightly and coats the back of a spoon. Do not allow it to boil.
-
Remove from heat and chill the sauce to thicken further.
-
Just before serving, strain the sauce to remove the gingerroot pieces.
-
Unmold the warm bread pudding onto a cutting board and slice into 8 pieces.
-
Ladle some Ginger Sauce onto each serving plate.
-
Cut each pudding slice in half diagonally and place on top of the sauce.
-
Serve immediately while warm.
