Description

This rich and aromatic pumpkin butter is the ultimate way to preserve the fleeting flavors of fall. By slowly simmering pureed pumpkin with golden honey, brown sugar, and a fragrant blend of cinnamon, cloves, nutmeg, and ginger, you create a spread with a luxurious, jam-like consistency. The bright acidity of fresh lemon juice and rind cuts through the sweetness, balancing the deep, earthy notes of the squash. It’s incredibly versatile: spread it on warm toast, swirl it into oatmeal, use it as a glaze for pork or chicken, or layer it in pancakes. Perfect for cozy weekend breakfasts or as a thoughtful homemade gift, this recipe transforms simple pantry staples into a sophisticated condiment that brings warmth to any meal.

Ingredients

Directions

  1. In a medium saucepan, combine the pumpkin puree, brown sugar, honey, lemon juice, and lemon rind.
  2. Add the cinnamon, nutmeg, ginger, cloves, and salt to the saucepan.
  3. Bring the mixture to a boil over medium-high heat, stirring frequently to ensure the sugar dissolves.
  4. Reduce the heat to low and simmer uncovered for about 40 minutes, stirring frequently to prevent sticking.
  5. Cook until the mixture has thickened to a consistency similar to stiff apple butter.
  6. Ladle the hot pumpkin butter into clean jars or freezer containers.
  7. Cover with lids and let cool to room temperature before sealing.

Note

Store in the refrigerator for up to several weeks, or freeze for several months for longer preservation.

For a smoother texture, ensure your pumpkin puree is very smooth before cooking. You can use a food processor if needed.

If using canned pumpkin, ensure it is 100% pure pumpkin and not "pumpkin pie filling" which already contains added sugars and spices.

This recipe yields approximately 2 cups of butter.

Adjust the amount of brown sugar or honey to taste if you prefer a less sweet spread.
