  1. Preheat the oven to 400&# 194;°F (200ðC).
  2. Prepare a double batch of pie dough and roll it out on a floured surface.
  3. Cut the dough into twelve 6x6 inch squares.
  4. Sprinkle each dough square with approximately 1 teaspoon of grated cheddar cheese.
  5. Peel and core the apples, leaving them whole.
  6. Place one apple in the center of each dough square.
  7. Fill the hollow center of each apple with 1 heaping teaspoon of mincemeat, 1 teaspoon of rum, a small dot of butter, and 1 tablespoon of sugar.
  8. Bring diagonally opposite corners of the dough over the apple to form two "ears" at the top, leaving the bottom open.
  9. Cover the dough "ears" with aluminum foil to prevent burning.
  10. In a small bowl, mix together brown sugar, heavy cream, and grated lemon rind to create a glaze.
  11. Brush the exposed dough and the foil-covered ears with the brown sugar mixture.
  12. Bake the dumplings for 35 to 40 minutes.
  13. Remove the aluminum foil from the dumplings.
  14. Brush the exposed "ears" with more of the brown sugar and cream mixture.
  15. Return to the oven and bake for an additional 5 to 10 minutes until the ears are golden brown.
  16. Remove from oven and let cool slightly.
