Heat the oven to 200°C (400°F).

Make the pastry by rubbing the lard and butter into the flour and salt until it resembles breadcrumbs, then add enough cold water to bring it together.

Roll out the pastry thinly and use it to line a greased 18cm flan ring or quiche tin.

Spread the flaked crab meat evenly over the base of the pastry case and sprinkle with chopped fennel leaves.

In a bowl, lightly whisk together the milk, cream, eggs, a few drops of anchovy essence, salt, pepper, and tomato puree until smooth.

Pour the custard mixture over the crab and fennel, ensuring it distributes evenly.

Reduce the heat to 180°C (350°F) and bake for a further 25 minutes, or until the quiche is golden brown and set in the center.

Substitutions: If you cannot find fresh fennel leaves, you can use finely chopped fresh fennel bulb, though the flavor will be milder. Anchovy essence can be replaced with a small amount of anchovy paste dissolved in the milk.
