Description

This savory Quinoa Loaf is a comforting and nutritious main course that brings together the earthy flavors of cooked quinoa and creamy pinto beans. Infused with aromatic vegetables like celery, fennel, and red bell pepper, it offers a delightful crunch and subtle heat. The addition of tahini and sesame seeds adds a rich, nutty depth, while whole wheat flour helps bind the mixture into a cohesive loaf. Perfect for weeknight dinners, meal prep, or as a satisfying sandwich filling, this dish is entirely plant-based.

Directions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa, water, and 1/2 teaspoon sea salt.
  2. Bring to a boil, then reduce heat to low, cover, and simmer until water is absorbed and quinoa is tender, about 15 minutes. Remove from heat and let stand covered for 5 minutes. Fluff with a fork and set aside to cool slightly.
  3. Preheat oven to 400°F (200°C).
  4. Heat olive oil in a large skillet over medium heat.
  5. Add diced celery, fennel, onions, garlic, and red bell pepper. Sauté, stirring occasionally, until vegetables are softened and fragrant, about 5-7 minutes.
  6. In a large mixing bowl, combine the cooked quinoa, sautéed vegetables, sesame seeds, cooked pinto beans, and tahini. Mix well to combine.
  7. Add whole wheat flour and remaining 1/3 teaspoon sea salt to the mixture. Stir until evenly incorporated and the mixture holds together when pressed.
  8. Line a small loaf pan with parchment paper or a baking sheet liner and lightly grease with oil.
  9. Press the quinoa mixture firmly and evenly into the prepared loaf pan, smoothing the top.
  10. Bake in the preheated oven for 45 minutes, or until the loaf is firm to the touch and reaches an internal temperature of 180-200°F (82-93°C).
  11. Remove from oven and let cool in the pan for 10 minutes.
  12. Carefully invert the loaf onto a wire rack or plate to release it from the pan. Allow to cool completely before slicing.
  13. Slice and serve warm or at room temperature, optionally topped with tomato sauce or your favorite condiment.
