Description

This comforting Rabbit Curry blends tender pieces of rabbit with a robust, aromatic sauce infused with curry powder and fresh orange zest. The dish achieves a perfect balance of savory depth from the browned meat and bright acidity from the citrus notes. A touch of sour cream adds a luxurious, velvety texture that coats the meat beautifully, while chopped apples provide a subtle sweetness that cuts through the richness. Ideal for a cozy weeknight dinner or a special family gathering, this recipe transforms humble ingredients into an elegant meal. Serve over fluffy rice to soak up every drop of the flavorful gravy.

Ingredients

Directions

  1. Preheat oven to 375ðF (190ðC).
  2. Melt butter in a large saucepan or skillet over medium heat.
  3. Brush rabbit pieces with melted butter and dredge them lightly in flour.
  4. Season the dredged rabbit pieces with salt and pepper.
  5. Place rabbit pieces on a baking rack and bake, turning occasionally, until tender and cooked through (about 45-60 minutes).
  6. Remove rabbit from oven and allow to cool slightly.
  7. Debone the rabbit meat, discarding bones and skin.
  8. In the same saucepan used for melting butter, sauté chopped onion and chopped apple in remaining butter until softened and translucent.
  9. Stir in 1/4 cup of flour and cook for 1 minute, stirring constantly to smooth out lumps.
  10. Gradually whisk in chicken broth and sour cream, ensuring the mixture is smooth.
  11. Simmer the sauce over low heat, stirring frequently, until thickened and well blended.
  12. Stir in grated orange peel, curry powder, and the deboned rabbit meat.
  13. Heat the mixture through until the rabbit is warm.
  14. Serve hot over steamed rice.

Note

Use fresh orange zest for the brightest flavor; dried peel can be used as a substitute but will be less aromatic.

Ensure the rabbit is fully cooked and tender before deboning. If the meat is tough, it may need additional baking time.

For a creamier consistency, add more sour cream gradually while simmering.

This dish pairs exceptionally well with basmati rice or naan bread.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of broth if the sauce has thickened too much.
