  1. Trim the lamb racks by removing excess fat between the ribs and scraping the bones clean to french the rack.
  2. Trim the fat layer on the meaty side to 1/8 inch thickness.
  3. Press the two racks together, interlinking the bones, and separate the bases slightly to stabilize in a shallow dish.
  4. Whisk together chopped mint, lemon rind, lemon juice, vegetable oil, and pepper in a small bowl.
  5. Brush the marinade generously over the meaty side of the lamb racks.
