Description

This Rainbow Ice Cream Cake is a nostalgic, show-stopping dessert that combines light angel food cake with creamy, fruit-flavored ice cream layers. The cake pieces are tossed in dry Jell-O powder, adding a burst of color and subtle fruit flavor without making the cake soggy. Layered with strawberries, mandarin oranges, and pineapple, this cake is as beautiful as it is delicious. Its perfect for summer gatherings, birthdays, or any occasion where you want to impress guests with minimal effort. The key is freezing it solid so it slices cleanly. Serve with a scoop of vanilla ice cream on the side for extra indulgence.

Ingredients

Directions

  1. Cut the angel food cake into three equal thirds horizontally.
  2. Tear each third of the cake into bite-sized pieces.
  3. Place the cake pieces into three separate mixing bowls.
  4. Sprinkle the dry Strawberry Jell-O over the first bowl of cake pieces, the Lime Jell-O over the second, and the Orange-Pineapple Jell-O over the third.
  5. Toss the cake pieces in each bowl until they are evenly coated with the dry Jell-O powder.
  6. Grease a 10-inch tube pan lightly with cooking spray.
  7. Spread the strawberry-coated cake pieces evenly into the bottom of the tube pan.
  8. Spoon the thawed strawberries over the cake layer and spread them evenly.
  9. Spread about one-third of the softened vanilla ice cream over the strawberries.
  10. Add the lime-coated cake pieces as the next layer, followed by the drained crushed pineapple.
  11. Spread another third of the vanilla ice cream over the pineapple layer.
  12. Add the orange-coated cake pieces as the final cake layer.
  13. Arrange the mandarin orange sections over the cake, followed by the remaining vanilla ice cream.
  14. Smooth the top layer of ice cream evenly.
  15. Cover the pan tightly with aluminum foil.
  16. Freeze the cake for at least 2 days, or until completely solid.
  17. To unmold, run a knife around the edge of the pan and invert onto a chilled serving plate.
  18. Let the cake stand at room temperature for 10 to 15 minutes before slicing and serving.

Note

Ensure the ice cream is soft enough to spread easily but not melted. If it's too hard, let it sit at room temperature for 10-15 minutes before assembling.

Draining the frozen strawberries and canned fruits thoroughly is crucial to prevent the cake from becoming soggy.

For easier unmolding, you can line the tube pan with plastic wrap before assembling, leaving excess hanging over the edges to help lift it out.

You can substitute other fruit flavors for the Jell-O and fresh fruits, such as raspberry, cherry, or blueberry, to create different color combinations.

Store any leftovers in the freezer, tightly wrapped, for up to one week. Allow to thaw slightly before slicing.
