Description

This elegant yet simple dish features tender rainbow trout fillets served with a luxurious roasted garlic mayonnaise. The fish is pan-seared to achieve a crispy, golden skin while keeping the flesh moist and flaky. The sauce combines the deep, sweet caramelization of slow-roasted garlic cloves with rich mayonnaise and a bright hint of lemon juice, creating a perfect balance of savory and tangy flavors. It is an ideal choice for a quick weeknight dinner that feels special enough for guests. The dish comes together in under 40 minutes, making it accessible for home cooks without sacrificing gourmet quality. Serve with a simple green salad or steamed vegetables for a complete meal.

Ingredients

Directions

  1. Preheat your oven to 400&# 194;°F (200ðC).
  2. To make the roasted garlic, slice the top off a head of garlic to expose the cloves. Drizzle with olive oil, wrap tightly in foil, and roast in the oven for 40-45 minutes until soft and golden. Let cool, then squeeze the soft cloves out of their skins.
  3. In a small bowl, mash the roasted garlic cloves with mayonnaise, a squeeze of fresh lemon juice, and a pinch of salt and pepper until smooth. Set aside.
  4. Pat the trout fillets dry with paper towels and season both sides with salt and pepper.
  5. Heat a skillet over medium-high heat with a drizzle of oil. Once hot, place the trout fillets skin-side down in the pan.
  6. Press down gently on the fillets for 10 seconds to prevent curling. Cook for 3-4 minutes until the skin is crispy and golden.
  7. Flip the fillets and cook for another 2-3 minutes until the fish is opaque and flakes easily with a fork.
  8. Remove from heat and serve immediately topped with a generous spoonful of the roasted garlic mayonnaise.

Note

If you do not have time to roast garlic from scratch, you can use jarred roasted garlic cloves. Adjust the amount to taste, as pre-roasted garlic can vary in intensity.

For a lighter version, substitute mayonnaise with Greek yogurt or sour cream mixed with a little olive oil.

Trout skin is edible and adds texture. If you prefer not to eat the skin, peel it off after cooking while the fish is still warm.

The roasted garlic mayonnaise can be made ahead and stored in the refrigerator for up to 3 days. Bring to room temperature before serving.
