Description

This historic Raisin Pie, also known as Rosina Pie, offers a comforting blend of plump raisins, bright lemon zest, and a smooth, custard-like filling. The long soaking time ensures the raisins are tender and juicy, releasing their natural sweetness into the thickened base. The result is a rich, aromatic dessert with a perfect balance of sweet and tart flavors. Ideal for autumn gatherings or nostalgic holiday dinners, this pie serves as a delightful, home-style finale to any meal. Its unique criss-crossed dough strips add a charming, rustic touch that distinguishes it from traditional fruit pies.

Ingredients

Directions

  1. Place raisins in a bowl and cover with 2 cups of cold water. Soak for 3 hours.
  2. Drain the raisins, discarding the soaking water.
  3. In a separate small bowl, whisk together the sugar, flour, and salt until no lumps remain.
  4. In a double boiler (or a heatproof bowl set over a pot of simmering water), combine the drained raisins, the sugar-flour mixture, lemon juice, lemon rind, and beaten egg.
  5. Cook over hot water for 15 minutes, stirring occasionally, until the mixture thickens slightly.
  6. Remove from heat and allow the filling to cool to room temperature.
  7. Line a pie pan with the bottom crust of the pastry.
  8. Pour the cooled raisin filling into the pastry-lined pan.
  9. Cut the remaining pastry into narrow strips. Arrange them in a criss-cross pattern over the top of the pie.
  10. Preheat oven to 450&# 194;°F (230ðC).
  11. Bake at 450ðF (232ðC) for 10 minutes.
  12. Reduce oven temperature to 350ðF (175ðC) and bake for an additional 30 minutes, or until the crust is golden brown.
