Description

This authentic French chocolate mousse is the epitome of indulgent dessert perfection. Featuring a luxurious blend of semi-sweet chocolate, rich egg yolks, and a splash of cognac, it delivers a complex, deep chocolate flavor balanced by a light, airy texture. The addition of whipped cream and stiff egg whites ensures every bite is velvety and smooth. It is an ideal choice for romantic dinners, special celebrations, or as a sophisticated finish to a holiday meal. While it requires a few hours of chilling time to set properly, the preparation is straightforward, making it a favorite for home bakers who appreciate classic technique. Serve it chilled for the best experience.

Ingredients

Directions

  1. Brush the inside of a 1-quart charlotte or ring mold with a thin film of vegetable oil.
  2. Invert the mold on paper towels to drain any excess oil.
  3. In a heatproof mixing bowl, beat the egg yolks and sugar with a whisk or electric beater for 2 to 3 minutes, until pale yellow and thick enough to form a ribbon when the whisk is lifted.
  4. Beat in the cognac.
  5. Set the mixing bowl over a pan of barely simmering water and continue beating for 3 to 4 minutes, until the mixture is foamy and hot.
  6. Transfer the bowl to a pan of iced water and beat for 3 to 4 minutes longer, until the mixture is cool and thick and creamy like mayonnaise.
  7. In a heavy saucepan, melt the chocolate with the strong coffee over hot water, stirring constantly until smooth.
  8. Remove from heat and beat in the butter, one piece at a time, to make a smooth cream.
  9. Beat the chocolate mixture into the egg yolk mixture.
  10. In a separate clean bowl, beat the egg whites until they form stiff peaks.
  11. Stir about 1/4 of the egg whites into the chocolate mixture to lighten it.
  12. Very gently fold in the remaining egg whites.
  13. Spoon the mousse into the oiled mold or individual dessert cups.
  14. Refrigerate for at least four hours, or until set.
  15. To unmold, run a long sharp knife around the sides of the mold and dip the bottom in hot water for a few seconds.
  16. Wipe the outside of the mold dry, place a chilled serving plate upside down over the mold, and quickly turn it over.
  17. Rap the plate on the table; the mousse should slide out easily.
  18. Garnish with whipped cream before serving.

Note

Ensure the bowl used for egg whites is completely clean and free of any fat, or the whites will not whip to stiff peaks.

If you prefer a stronger chocolate flavor, you can use 70% dark chocolate instead of semi-sweet.

The cognac can be substituted with Grand Marnier, rum, or omitted for a non-alcoholic version.

Mousse can be made up to 24 hours in advance. Keep refrigerated until ready to serve.

If the mousse does not unmold immediately, repeat the hot water dip process.
