  1. In a large pot, combine soaked red kidney beans, 1 bay leaf, and enough water to cover the beans by 2 inches. Bring to a boil, then reduce heat and simmer until beans are tender, about 30-40 minutes.
  2. While beans are cooking, heat olive oil in a separate large skillet or pot over medium heat. Add chopped onion, green bell pepper, and garlic. Sauté for 5 minutes until softened and fragrant.
  3. Once beans are tender, drain them, reserving 3 cups of the cooking liquid. Discard the bay leaf.
  4. Add the drained beans to the skillet with the sautéed vegetables. Stir in cumin, oregano, salt, and black pepper to taste.
  5. Add the reserved cooking liquid and uncooked rice to the skillet. Stir well to combine.
