Directions
-
Wash the rice and yellow lentils thoroughly under cold water until the water runs clear.
-
If using yellow lentils, soak them in water until just soft, then drain. (Note: This step is not necessary if using green mung beans).
-
Combine the drained lentils and rice with the cinnamon stick, cloves, cardamom pods, water, and salt in a medium pot.
-
Cover and simmer over low heat for about 30 to 40 minutes, or until the rice and lentils are very soft and tender. Add more water if the mixture thickens too much before the rice is cooked.
-
While the rice cooks, heat the oil in a wok or skillet over medium heat.
-
Add the cumin seeds and green chilies (if using) to the hot oil. Stir-fry for 1 minute until the seeds begin to crackle.
-
Add the turmeric and asafoetida to the oil mixture and stir quickly for another 30 seconds until fragrant.
-
Pour the hot oil spice mixture over the top of the cooked rice and lentils.
-
Cover the pot with a damp towel, then place the lid on top. Let it stand on very low heat for 5 to 10 minutes to steam.
-
Remove from heat, keep covered, and let stand for another 15 minutes.
-
Stir gently with a fork to fluff the rice and serve hot, garnished with fresh coriander leaves if desired.
