Description

This rich and aromatic coconut rice dish is a comforting favorite that brings vibrant flavors to your table. Infused with fresh turmeric and simmered in thick coconut milk, the rice becomes tender and deeply fragrant. The addition of hard-boiled eggs provides a satisfying protein element, while a hint of tamarind juice adds a subtle tang to balance the sweetness of the coconut. It is an ideal side dish for spicy curries or a hearty main meal when served with extra vegetables. The combination of earthy turmeric, creamy coconut, and savory eggs creates a harmonious blend of textures and tastes that is both simple to prepare and deeply satisfying. Perfect for family dinners or casual gatherings, this recipe offers a reliable way to elevate a standard rice bowl into a flavorful, restaurant-quality experience.

Ingredients

Directions

  1. Wash the rice thoroughly and drain well in a sieve or colander.
  2. If using fresh turmeric, blend it with 1/4 cup water until smooth, then strain through a fine sieve to extract the juice.
  3. If using turmeric powder, mix 2 teaspoons of powder with 2 tablespoons of water to form a paste.
  4. In a heavy saucepan, combine the drained rice, turmeric juice (or paste), coconut milk, salt, and tamarind juice.
  5. Add the peeled hard-boiled eggs to the saucepan.
  6. Cover the saucepan and bring the mixture to a boil over moderate heat.
  7. Once boiling, reduce the heat to the minimum setting and simmer gently.
  8. Cook until the rice is tender and has absorbed most of the coconut milk, stirring occasionally to prevent sticking.
  9. If the rice appears too dry before it is fully cooked, sprinkle in a little hot water or stock and continue cooking.
  10. Remove any leftover turmeric leaves or aromatics from the pot before serving.
