Ingredients

Directions

  1. Finely chop the head of cabbage into strips approximately 1 inch wide and 3 inches long.
  2. In a large pot, melt the butter with the olive oil over medium heat.
  3. Add the chopped garlic and sauté lightly until fragrant, about 1 minute.
  4. Add the chopped cabbage to the pot and mix well to coat with the butter and oil mixture.
  5. Pour in 1/2 cup of water, partially cover the pot, and cook until the cabbage is tender and lightly browned in spots, stirring occasionally.
  6. Stir in the tomato sauce and mix thoroughly with the cabbage.
  7. Add 1 1/2 cups of Uncle Ben's converted rice to the pot and mix well.
  8. In a separate small pot, bring 6 to 8 cups of water to a simmer with the flavor cubes dissolved.
  9. Ladle the hot broth into the rice and cabbage mixture one ladle at a time, waiting for each addition to be absorbed before adding more.
  10. Continue adding broth and stirring frequently to prevent sticking until the rice is fully cooked and tender.
  11. Season with salt and pepper to taste.
  12. Serve hot, topped with grated cheese if desired.

Note

This dish can be served as a main course, a first course, or a side dish.

If you do not have converted rice, you can use long-grain rice, but adjust the liquid and cooking time accordingly. Converted rice holds its shape better in this type of dish.

For a vegan version, substitute the butter with additional olive oil or vegan butter, and use vegetable flavor cubes.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or broth to restore moisture.

Grated Parmesan or Pecorino Romano cheese adds a nice salty finish, but any hard grated cheese works well.
