Description

This classic Risotto alla Milanese is a luxurious Italian dish known for its vibrant golden hue and rich, creamy texture. The key to this recipe is high-quality saffron threads, which infuse the Arborio rice with a delicate floral aroma and distinct color. Paired with salty prosciutto, sweet Marsala wine, and nutty Parmesan cheese, every bite is a balance of savory and umami flavors. It&# 226;ÂÂs an elegant yet approachable meal perfect for date nights, holiday dinners, or when you want to treat yourself to something special. The slow stirring process ensures the rice releases its starch, creating a velvety sauce that coats each grain perfectly.

Ingredients

Directions

  1. In a medium saucepan, bring the chicken stock to a simmer and crumble in the saffron threads. Maintain a low simmer over moderate heat.
  2. In a large nonreactive saucepan or flameproof casserole, heat the olive oil over moderate heat.
  3. Add the minced onion and finely diced prosciutto. Cook until the onion is softened and translucent, about 2 minutes.
  4. Add the Arborio rice and stir for 1-2 minutes until the grains are well coated with oil and slightly translucent at the edges.
  5. Pour in the Marsala wine and cook, stirring constantly, until the liquid has completely evaporated.
  6. Add 1/2 cup of the simmering saffron stock. Cook, stirring frequently, until the liquid is absorbed.
  7. Continue adding stock 1/4 cup at a time, stirring constantly and waiting until the previous addition is absorbed before adding more. Cook for 20-25 minutes until the rice is tender but still slightly crunchy in the center (al dente).
  8. Stir in the grated Parmesan cheese, butter, and black pepper. Season with salt to taste if needed.
  9. Continue to stir and cook for 3-6 minutes longer, adding a little more stock if necessary, until the rice is fully tender and bound in a creamy sauce.
  10. Serve immediately while hot.

Note

For best results, keep the stock hot throughout the cooking process to maintain the rice's temperature.

If Marsala wine is unavailable, you can substitute with dry white wine, though the flavor profile will differ slightly.

Risotto is best served immediately as it thickens as it cools. If leftovers occur, reheat gently with a splash of stock or water to restore creaminess.

Ensure your saffron is high quality; it should be deep red/orange threads, not yellow powder, for the best color and flavor.
