  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Heat olive oil in a large Dutch oven or roasting pan over medium-high heat.
  3. Place whole chickens breast-down in the hot pan.
  4. In a small bowl, combine ground ginger, paprika, crumbled bay leaves, minced garlic, chopped onion, minced parsley, minced cilantro, and saffron if using.
  5. Spread the herb and spice mixture evenly over the chickens.
  6. Season generously with salt and freshly ground pepper to taste.
  7. Add enough water or chicken stock to the pan to cover the chickens halfway.
  8. Place the pan over high heat on the stovetop and bring the liquid to a boil.
  9. Remove the pan from the heat and carefully place it in the preheated oven.
  10. Roast uncovered for 30 minutes.
  11. Using tongs, carefully turn the chickens over so they are breast-side up.
  12. Continue baking until the chicken is very tender and the skin is golden brown, about 30 minutes more.
  13. Transfer the roasted chickens to a serving platter and cover loosely with foil to keep warm.
  14. Place the roasting pan back on the stovetop over medium-high heat.
  15. Bring the remaining pan juices to a boil, scraping up any browned bits from the bottom of the pan.
  16. Stir in the drained green olives and lemon zest.
  17. Reduce heat to low and simmer for 5 minutes to allow the flavors to meld.
