Directions
-
Score the flat side of each chestnut, cutting through the outer skin.
-
Boil chestnuts in water, then reduce heat to low and simmer until tender, about 30 minutes.
-
Peel chestnuts while warm, removing both the outer shell and the dark inner skin.
-
Remove giblets and neck from the turkey; set aside.
-
Rinse the turkey inside and out until water runs clear, then pat thoroughly dry.
-
Gently separate the skin from the breast meat by running fingers underneath, being careful not to tear the skin.
-
Spread softened butter evenly over the breast meat under the skin.
-
In a medium bowl, break the peeled chestnuts into bite-size pieces.
-
Mix in pork sausage, chopped shallots, parsley, thyme, bay leaf, salt, pepper, minced garlic, and beaten eggs.
-
Chop the reserved giblets and mix them into the stuffing mixture.
-
Taste-test a small portion of the stuffing by cooking it in a skillet; adjust seasoning if needed.
-
Fill the turkey cavity with the stuffing mixture, packing it loosely.
-
Truss the turkey to secure the legs and wings.
-
Place the turkey in a large roasting pan and pour dry white wine around the bottom.
-
Roast at 350&# 194;°F (177ðC), basting every 30 minutes with pan juices.
-
If the breast browns too quickly, cover it loosely with aluminum foil.
-
After 2 hours, add the onion wedges and carrot pieces to the pan around the turkey.
-
Continue roasting until the skin is golden and the thigh is tender, approximately 3 to 3.5 hours total.
-
Remove the turkey from the oven and let it rest for 30 to 45 minutes.
-
During resting, turn the turkey breast-down and prop the legs up to help juices redistribute.
-
Pour pan juices into a saucepan, reduce over medium-high heat for 2 minutes, scraping up browned bits.
-
Season the gravy with salt and pepper, strain, and transfer to a gravy boat.
-
Scoop the stuffing into a serving dish and keep warm.
-
Carve the turkey and serve with the stuffing and gravy.

Note
To peel chestnuts easily, make a small cut on the flat side before boiling. Peel them while they are still warm, as the inner skin becomes difficult to remove when cool. If they cool down, reheat them in the water.
The stuffing can be cooked separately if preferred. Bake in a covered dish at 350ðF for 30 minutes, then uncover and cook for an additional 10 to 15 minutes until browned and cooked through. If stuffing is cooked separately, the turkey may roast slightly faster.
This stuffing is versatile and can also be served as a side dish for pork roast.
For wine pairing, a red Burgundy or a Volnay complements the flavors well.
