Ingredients

Directions

  1. Preheat the oven to 180ðC (356ðF (320ðF)) (160ðC fan-forced).
  2. Place a wire rack in an ovenproof dish.
  3. Butterfly the chicken by cutting horizontally into the side, not all the way through, so it opens out flat.
  4. In a small bowl, combine the parsley, mint, garlic, lemon zest, and oil.
  5. Spread the herb mixture over the flattened chicken.
  6. Roll up the chicken to form a log and secure with kitchen string.
  7. Place the chicken on the prepared rack and drizzle with extra oil.
  8. Roast the chicken, basting occasionally with pan juices, for 1 hour and 10 minutes or until the juices run clear when pierced.
  9. Cover the chicken with foil and let it rest for 15 minutes.
  10. Slice the rested chicken.
  11. Serve the sliced chicken with mixed salad greens and lemon wedges, topped with lemon mayonnaise.

Note

For best results, ensure the chicken is fully rested before slicing to retain its juices.

You can substitute the mixed salad greens with your favorite leafy greens such as arugula, spinach, or romaine lettuce.

If you don't have fresh mint, you can use dried mint, but reduce the quantity by half as it is more potent.

Leftover roasted chicken can be stored in an airtight container in the refrigerator for up to 3 days.

For a lighter version, use olive oil instead of vegetable oil and a low-fat mayonnaise.
