  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the grated ginger, minced garlic, honey, sesame oil, soy sauce, salt, and pepper to create a smooth paste.
  3. Rub the ginger-garlic paste all over the chicken, ensuring it is coated inside and out. Let it sit for 20 minutes to marinate.
  4. Remove the chicken from the oven and let it rest for 10 minutes. Slice the chicken into serving pieces.
  5. While the chicken rests, collect the drippings from the roasting pan. Add water to make approximately 600ml of stock if needed, straining out any solids.
  6. Bring the chicken stock to a boil. Add the rice and cook according to package instructions until tender.
  7. In a separate pot, simmer the remaining stock with bean sprouts or cabbage, seasoning with salt and pepper to taste. Cook for 5-10 minutes until vegetables are tender.
  8. Prepare the chili sauce by blending chili, garlic, lime juice, sugar, and salt if making from scratch, or simply warm up store-bought sauce.
  9. Arrange cucumber slices on a serving plate. Place the sliced chicken in the center and drizzle with any remaining juices from the resting chicken.
  10. Garnish the chicken with chopped scallions.
