Roasted Corn And Lobster Chowder
Description
This luxurious chowder combines the smoky sweetness of grilled corn with the rich brininess of fresh lobster. The base is built by simmering corn cobs and aromatics in chicken stock, creating a deeply flavorful broth. A hint of vanilla bean adds an unexpected aromatic depth, while cumin and cayenne provide a gentle warmth. Finished with crème fraîche, the soup is velvety and comforting. It’s an elegant dish perfect for special dinners or a hearty weekend meal, offering a sophisticated twist on classic New England seafood soups. Serve with crusty bread to soak up every drop.Ingredients
Directions
-
Brush corn ears lightly with butter and grill until toasted on all sides, about 2 minutes per side.
-
Cut the roasted kernels off the cobs, reserving both the kernels and the cobs.
-
Melt the butter in a large, heavy-bottomed soup pot over medium heat.
-
Add the corn cobs, onion, celery, leek, red pepper, and jalapeños; sauté until the vegetables are soft but not browned.
-
Stir in the cumin, coriander, vanilla bean seeds, salt, and cayenne; cook for 2 to 3 minutes to release the flavors.
-
Pour in the hot chicken stock and bring to a boil.
-
Reduce heat to maintain a simmer and add the reserved corn cobs along with the lobster body tied in cheesecloth.
-
Simmer for 40 to 45 minutes, then remove and discard the corn cobs and the lobster body.
-
Add the hacked lobster meat (tail and claws) and simmer for 4 to 5 minutes until the lobster is opaque.
-
Stir in the crème fraîche and the reserved roasted corn kernels.
-
Serve immediately.
