Description

This Roasted Red Pepper Cream Soup is a vibrant, velvety dish that balances the natural sweetness of charred bell peppers with the richness of light cream. The smoky depth from roasting the peppers provides a complex flavor base, while fresh basil and a hint of cayenne add brightness and warmth. Perfect for a cozy dinner or as an elegant starter, it comes together quickly once the peppers are prepared. The smooth texture makes it incredibly comforting, ideal for chilly evenings. Its a flexible recipe that pairs beautifully with crusty bread or a simple salad, offering a satisfying meal that feels both rustic and refined.

Ingredients

Directions

  1. Turn gas burner to high. Impale a red pepper on a long-handled fork and hold over the flame, turning frequently to char the skin evenly until brown and blistered.
  2. Immediately plunge the charred pepper into a bowl of ice water to cool. Repeat with remaining peppers.
  3. Once cool, peel off the charred skin, remove seeds and stems, and chop the peppers coarsely.
  4. Alternatively, place peppers on a baking sheet and broil in a preheated broiler 4 inches from the element, turning occasionally, until skin is evenly charred. Peel and chop as above.
  5. In a medium saucepan, combine olive oil, chopped onions, minced garlic, basil, salt, cayenne, black pepper, and the roasted red peppers.
  6. Cook over high heat for 3 minutes, stirring occasionally, until onions begin to soften.
  7. Stir in chicken stock and 1/4 cup of the light cream. Bring the mixture to a boil.
  8. Reduce heat to medium and simmer, stirring occasionally, for about 8 minutes to blend flavors.
  9. Transfer the hot pepper mixture to a food processor or blender. Puree until completely smooth, about 2 minutes.
  10. Return the pureed soup to the saucepan. Stir in the remaining cream and heat gently over medium-low heat until warmed through.
  11. Serve immediately, garnished with fresh basil chiffonade.
