Description

These Roasted Salsa Spareribs bring the vibrant flavors of the Mexican grill to your backyard. The dish features tender pork spareribs slow-cooked over indirect heat and basted with a rustic, homemade salsa made from flame-kissed tomatoes and Anaheim chiles. The salsa offers a perfect balance of smoky, acidic, and fresh notes, cutting through the richness of the pork. This is an ideal centerpiece for summer barbecues, family gatherings, or casual weeknight dinners when you want something special yet straightforward.

Ingredients

Directions

  1. Prepare a charcoal grill for indirect cooking. Light the charcoal and allow it to burn until the coals are covered with gray ash. Spread half of the coals to one side of the grill grate to create a hot zone and a cool zone.
  2. Place the tomatoes and whole Anaheim chiles directly over the hot coals. Grill, turning occasionally, until the chiles are charred on all sides and the tomatoes are hot and streaked with brown marks. This should take about 10-15 minutes.
  3. Remove the charred vegetables from the grill and place them in a bowl. Cover the bowl with plastic wrap or a plate to steam for 10 minutes, which will loosen the skins.
  4. While the vegetables steam, prepare the salsa. Peel the skins off the chiles and tomatoes, discard stems and seeds, and roughly chop the flesh.
  5. In a medium bowl, combine the chopped tomatoes and chiles with their juices, red wine vinegar, minced garlic, and chopped cilantro. Season with salt to taste. Set aside.
  6. Arrange the pork spareribs on the cool side of the grill (indirect heat). If the grill is small, overlap the ribs slightly to fit. Cover the grill and adjust the vents to maintain a steady temperature of about 275°F (135°C) to 300°F.
  7. Cook the ribs, basting occasionally with the prepared salsa, for 1 to 1.5 hours. Check for doneness by cutting into the meat near the bone; it should no longer be pink and should be tender.
  8. Remove the ribs from the grill and let them rest for 5 minutes. Cut the ribs into 2 to 3 rib portions.
  9. Serve the ribs garnished with lime slices. Pass the remaining salsa, sour cream, and lime wedges at the table for guests to top their ribs.
