  1. half thinly sliced 1 lg Green bell pepper, seeded -and
  2. cut into thin strips 2 ea To 3 cloves garlic, finely -chopped 2 c Drained and chopped canned -whole tomatoes 1/2 c Cooking sherry Salt and freshly ground -black pepper to taste 1/2 c Finely chopped drained -pimientos for
  3. garnish 1/2 c Drained canned early sweet -peas, for
  4. garnish , optional 1 ea
  5. Place the beef and 1 bay -leaf in a large saucepan, -
  6. cover with salted water, and
  7. cook over low
  8. heat , covered, until the meat is tender, 1 to 1 1/2 hours.
  9. Remove the meat from the stock (save the stock for another use),
  10. allow to
  11. cool at room temperature, then
  12. cut the meat into 2-inch chunks.
  13. Meanwhile, in a large skillet,
  14. heat the oil over low
  15. heat until fragrant, then
  16. cook the onions, bell pepper, and garlic, stirring, or until the onions are tender, 6 to 8 minutes.
  17. Add the tomatoes, sherry, and the remaining bay leaf, and cook, uncovered, an additional 15 minutes.
  18. When the meat is
  19. cool , shred it with your fingers,
  20. season with salt and pepper,
  21. add it to the tomato mixture,
  22. cover , and
  23. simmer over low
  24. heat for 50 minutes.
  25. Remove the bay leaves,
  26. garnish with the pimientos and peas, and
  27. serve with Arroz Blanco ( See CUBA07.TXT).

  29. heat until heated through, 50 to 35 minutes
