Ingredients

2 cup Loosely packed fresh rose petals, washed and unsprayed
3 cups Water
3 cups Sugar
3 tablespoons Freshly squeezed lemon juice
3 oz Liquid fruit pectin

Directions

Remove stems and white base portions from the rose petals, keeping only the colored parts.

Place the cleaned rose petals in a large non-reactive saucepan and cover with 3 cups of water.

Bring the water to a boil, then reduce heat and simmer gently for 10 minutes to steep the petals and extract color and flavor.

Remove from heat and let the petals steep in the hot water for another 10 minutes.

Strain the liquid through a fine-mesh sieve or cheesecloth into a clean saucepan, pressing on the petals to extract all the liquid. Discard the petals.

Measure 3 cups of the rose-infused liquid. If you have more, save the excess for other uses; if less, add plain water to make 3 cups.

Add the sugar and lemon juice to the rose liquid in the saucepan.

Bring the mixture to a full rolling boil over high heat, stirring constantly until the sugar dissolves.

Stir in the liquid pectin and return to a full rolling boil for exactly 1 minute, stirring constantly.

Ladle the hot jelly immediately into sterilized jars, leaving 1/4 inch headspace.

Wipe the rims of the jars, seal with lids and rings, and process in a boiling water bath for 10 minutes to ensure proper sealing.
