  3. Place each slice between sheets of plastic wrap and lightly pound into thin paillardes.

  10. Lay out 2 or 3 cabbage leaves to form a square and place a turkey roulade in the center.

  12. Refrigerate the wrapped roulades while preparing the sauce and sides.
  13. In a saucepan over high heat, combine 1 cup Sauternes wine and 1 cup low-salt chicken broth.
  14. Reduce the liquid until it coats the back of a spoon, approximately 12 minutes.
  15. Sprinkle 1/3 cup sun-dried cherries into the reduced sauce and stir to combine.
  16. Peel the sweet potato and poach in boiling water until just tender, about 12-15 minutes.
  17. Drain the sweet potato, slice it very thinly, and cut into julienne strips.
  18. Heat 2 tablespoons vegetable oil in a large sauté pan over high heat.
  19. Fry the sweet potato strips for 1 minute until crisp, then pat dry with paper towels.
