Description
This sophisticated Ruby Grapefruit Terrine offers a refreshing balance of tart citrus and subtle tannic notes from black tea. The grapefruit segments are carefully arranged and set in a light gelatin mixture, creating a beautiful, jewel-toned presentation perfect for brunches or as a palate-cleansing dessert. The accompanying tea sauce, thickened with cornstarch and brightened with orange concentrate, adds a warm, aromatic depth that complements the cold terrine. It is an impressive yet manageable dish that highlights the natural sweetness and acidity of ruby grapefruit. Ideal for spring entertaining or as a unique vegan-friendly option that feels luxurious without heavy creams or dairy.Ingredients
Directions
-
Peel and remove the white membrane from 8 grapefruits.
-
Over a bowl, cut the fruit between the inner membranes to free the segments.
-
Carefully drain the juice from the bowl and measure it.
-
You should have approximately 2 1/2 cups of juice and 6 cups of segments. If needed, segment or ream another fruit to reach these amounts.
-
Cover and chill the 8 to 10 most attractive segments until ready to serve.
-
In a 4 1/2- by 8-inch metal loaf pan, neatly layer the remaining grapefruit segments to within 1/2 inch of the pan rim.
-
In a 1- to 2-quart pan, mix together 1 cup of the reserved grapefruit juice, orange juice concentrate, 1 tablespoon sugar, and 3 teaspoons unflavored gelatin.
-
Let the mixture stand for about 5 minutes to allow the gelatin to soften.
-
Stir over medium heat until all the gelatin has completely dissolved.
-
Pour the gelatin mixture over the grapefruit segments in the loaf pan.
-
Cover the terrine and chill for at least 8 hours or up to 1 day until firm.
-
Meanwhile, make the tea sauce: In a small saucepan, combine 1 tablespoon black tea leaves, 1 tablespoon cornstarch, 2 tablespoons water, and the remaining grapefruit juice.
-
Bring the sauce to a boil, stirring constantly, until it thickens. Remove from heat and discard the tea leaves.
-
To serve, dip the chilled terrine briefly in hot water to within 1/2 inch of the pan rim to loosen the edges.
-
Uncover and place a platter over the pan; holding them together firmly, invert the terrine onto the platter.
-
Pour equal portions of the warm tea sauce onto 8 to 10 dessert plates.
-
With a sharp knife, carefully cut the terrine into 8 to 10 equal slices.
-
Set one slice on each plate over the sauce.
-
Garnish with the reserved chilled grapefruit segments and rinsed citrus leaves.

Note
Ensure the gelatin is fully dissolved before pouring over the fruit to prevent grainy texture.
The terrine must be chilled for at least 8 hours to set properly.
For the tea sauce, you can use Earl Grey for a hint of lavender, but standard black tea provides a cleaner flavor profile.
If the grapefruits are very tart, you may increase the sugar in the gelatin mixture slightly to balance the acidity.
Citrus leaves can be substituted with mint leaves if citrus leaves are unavailable.
