Description

This classic Russian Chocolate Tort is a decadent dessert that surprises with its unique texture and depth. The secret ingredient, mashed potatoes, ensures an incredibly moist and tender crumb without altering the flavor profile, while ground almonds add a subtle nuttiness and richness. The cake is layered with a sweet raspberry or apricot filling and coated in a luxurious chocolate coffee rum frosting. It&# 226;ÂÂs an elegant yet comforting treat, perfect for holiday gatherings, special celebrations, or simply when you crave a truly indulgent chocolate experience. Directions

  1. Preheat oven to 325°F (165°C).
  2. Generously butter and flour a 10-inch springform pan.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg yolks one at a time, ensuring each is fully incorporated before adding the next.
  5. Mix in the heavy cream, mashed potatoes, ground almonds, and melted chocolate, beating until smooth.
  6. Stir in the vanilla extract and rum.
  7. In a separate bowl, sift together the cinnamon, flour, and baking powder.
  8. Gradually add the dry ingredients to the wet mixture, mixing well until just combined.
  9. In a clean bowl, beat the egg whites until stiff peaks form (but not dry).
  10. Gently fold the beaten egg whites into the chocolate batter in three additions, being careful not to deflate the mixture.
  11. Pour the batter into the prepared springform pan and smooth the top.
  12. Bake for 1 hour 30 minutes, or until a knife inserted into the center comes out clean.
  13. Allow the cake to cool in the pan for about 15 minutes.
  14. Run a knife around the edge of the cake to loosen it, then release the springform side and transfer the cake to a wire rack to cool completely.
  15. While the cake cools, prepare the frosting: Cream the softened butter and powdered sugar together until smooth.
  16. Add the warm coffee, melted chocolate, dark rum, and vanilla extract to the butter mixture.
  17. Beat the frosting until smooth and well combined.
  18. Once the cake is completely cool, carefully slice it horizontally into two even layers.
  19. Spread the raspberry jam or apricot puree evenly over the bottom layer.
  20. Place the top layer back on the cake.
  21. Spread the chocolate frosting over the top and sides of the cake.
  22. Decorate with whole or slivered almonds if desired.
