  1. Boil the eggs for 10-12 minutes until hard-boiled. Transfer to an ice bath or run under cold water to cool completely. Peel the eggs and slice them in half lengthwise.
  2. Remove the yolks from the egg whites and place them in a mixing bowl. Reserve the egg white halves on a serving platter.
  3. Finely chop the mushrooms until you have approximately 2 cups. Finely chop the 1/2 cup of parsley.
  4. Mash the egg yolks in the bowl until smooth. Mix in the chopped mushrooms, chopped parsley, black pepper, and mayonnaise. Stir until well combined to form a thick, grey, mushroomy paste.
  5. Spoon or pipe the mushroom-egg mixture into the hollowed-out egg white halves, creating a heaping mound.
  6. Garnish each egg with a tiny dot of mayonnaise and a small parsley leaf.
  7. Refrigerate for at least 30 minutes before serving to allow flavors to set.

Note

You can prepare these eggs up to several hours in advance. Cover tightly with plastic wrap and store in the refrigerator until ready to serve.

For a smoother texture, pulse the mushrooms and parsley in a food processor until very fine, as recommended by the original recipe.

If you prefer a lighter version, you can use reduced-fat mayonnaise, though the texture may be slightly less rich.

Plan on serving 3-4 halves per person for a generous appetizer portion.
