Add 4 egg yolks to the butter mixture and beat until well combined.

In a separate bowl, beat 4 egg whites until stiff peaks form, gradually adding 80 grams of granulated sugar.
-
Slowly fold the beaten egg whites into the chocolate mixture.
-
Sift together 90 grams of flour and 1/2 tsp of baking powder, then gently fold into the chocolate mixture until just combined.
-
Pour the batter into a prepared cake pan.
-
Bake for 60-70 minutes at 170 degrees Celsius, or until a skewer inserted into the center comes out clean.
-
Allow the cake to cool completely.
-
Cut the baked cake horizontally into two layers.
-
Spread a layer of apricot marmalade on the bottom half of the cake.
-
Place the top half of the cake back on.
-
Melt semisweet chocolate to create a glaze and cover the entire cake with it.
-
Optional: Sprinkle rum on the cake layers before assembling for added flavor.
-
Optional: Before glazing, roll out marzipan dough flat and cover the cake with a thin layer of it.
Note
Store the cake in an airtight container at room temperature for up to 3 days.
For best results, serve with unsweetened whipped cream.
The marzipan layer is traditional in some variations but can be omitted if preferred.
Ensure the chocolate for the glaze is melted smoothly to achieve a glossy finish.
