  • 90 grams butter
  • 80 grams powdered sugar
  • 4 whole eggs (separated)
  • 90 grams semisweet chocolate
  • 80 grams granulated sugar
  • 90 grams flour
  • 1/2 tsp baking powder
  • apricot marmalade
  • semisweet chocolate (for glaze)
  • rum (optional)
  • marzipan dough (optional)

    Preheat oven to 170 degrees Celsius (340 degrees Fahrenheit).

    Beat 90 grams of butter with 80 grams of powdered sugar until creamy.

    Add 4 egg yolks to the butter mixture and beat until well combined.

    Melt 90 grams of semisweet chocolate and add it to the butter and egg yolk mixture.

    In a separate bowl, beat 4 egg whites until stiff peaks form, gradually adding 80 grams of granulated sugar.

    Slowly fold the beaten egg whites into the chocolate mixture.

    Sift together 90 grams of flour and 1/2 tsp of baking powder, then gently fold into the chocolate mixture until just combined.
