Description

These Salmon Burgers are a delightful twist on classic fish cakes, offering a flaky, moist texture with a satisfying crunch from the breadcrumb coating. The combination of fresh lemon juice, green onions, and black pepper brightens the rich flavor of the salmon, making it perfect for a light yet hearty meal. They are incredibly versatile, suitable for weeknight dinners or casual gatherings. Paired with a refreshing, cool yogurt-cucumber sauce, these burgers provide a balance of warmth and freshness. Simple to prepare with pantry staples, this recipe delivers restaurant-quality results at home. Serve them on buns with lettuce and tomato, or enjoy them straight from the skillet as an elegant appetizer.

Ingredients

Directions

  1. In a medium bowl, combine the flaked salmon, beaten eggs, 2/3 cup of the dry bread crumbs, chopped green onions, lemon juice, and pepper. Mix gently until well blended.
  2. Shape the mixture into 4 patties, each about 3/4 inch thick.
  3. Coat the patties with the remaining 1/3 cup of dry bread crumbs.
  4. Place the coated patties on a wax-paper-lined plate and chill in the refrigerator for 1 hour to help them hold their shape.
  5. While the patties chill, prepare the sauce: In a small bowl, combine 1/2 cup plain low-fat yogurt, 1/4 cup chopped cucumber, 1 tablespoon fresh chopped dill, and a pinch of salt and pepper. Cover and refrigerate for at least 30 minutes.
  6. In a large skillet, heat the vegetable oil over medium heat.
  7. Carefully add the salmon patties to the hot oil. Cook for 5 minutes per side, or until golden brown and heated through.
  8. Remove patties from the skillet and drain on paper towels.
  9. Serve the salmon burgers warm, topped with the chilled yogurt-cucumber sauce.

Note

The recipe calls for a full cup of vegetable oil for frying, but you only need enough to coat the bottom of the skillet generously (about 2-3 tablespoons). The rest can be saved for future use.

Chilling the patties before frying is crucial to ensure they don't fall apart in the pan.

For the sauce, ensure the cucumber is peeled and seeded if it has large seeds to prevent the sauce from becoming watery.

Leftover salmon burgers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven to maintain texture.

You can substitute canned salmon with cooked, fresh salmon that has been flaked.
