Ingredients

Directions

  1. Bring a large pot of salted water to a boil. Cook the 12 oz fettuccine according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While the pasta cooks, bring the whipping cream, clam juice, and Wondra flour to a boil in a large skillet over medium-high heat, stirring frequently with a whisk to prevent lumps.
  3. Once the sauce begins to simmer and thicken slightly, add the drained fettuccine to the skillet. Toss constantly for about 2 minutes until the sauce coats the pasta evenly. If too thick, add reserved pasta water a splash at a time.
  4. Remove the skillet from heat. Add the 6 oz thinly sliced smoked salmon, chopped green onions, 1/4 cup fresh dillweed, and 1 tablespoon drained capers.
  5. Gently toss to combine and wilt the salmon slightly. Season with freshly ground black pepper and salt to taste (be cautious with salt as the salmon and capers are salty).
  6. Serve immediately, garnished with lemon wedges for squeezing over the top.
