Salmon/Trout Hollandaise
Description
This elegant dish features tender trout or salmon fillets gently steamed to perfection, preserving their natural moisture and mild flavor. The real star is the homemade hollandaise sauce, a luxurious emulsion of egg yolks, melted butter, and a hint of vinegar and lemon. The sauce offers a creamy, silky texture with a bright, tangy kick that cuts through the richness of the butter. Its a sophisticated meal that feels special enough for date night or a dinner party but is simple enough for a weekend treat. Serve with crisp asparagus or green beans for a complete, restaurant-quality experience at home.Ingredients
Directions
-
Cut the fish fillets into serving-size portions.
-
Steam the fillets over salted water for 9-10 minutes, or until the fish flakes easily when tested with a fork.
-
Remove the fish from the heat and carefully transfer to a heated platter. Keep warm.
-
In a small saucepan, combine the water, crushed peppercorns, and white wine vinegar.
-
Reduce the vinegar mixture over medium heat until only about 1 tablespoon of liquid remains. Set aside.
-
Melt the butter gently in a small saucepan, then remove from heat. Keep the butter warm but not hot.
-
Set up a double boiler with simmering water, ensuring the bowl does not touch the water.
-
In the top of the double boiler, whisk together the egg yolks and the reduced vinegar mixture.
-
Whisk continuously over gentle heat until the mixture becomes creamy and slightly thick.
-
Slowly pour in the melted butter in a thin, steady stream, whisking briskly and constantly to emulsify.
-
Once all butter is incorporated, whisk in the lemon juice and salt to taste.
-
Remove the sauce from the heat immediately once it reaches the desired thick consistency.
-
Pour the hollandaise sauce over the steamed fish fillets and serve immediately.

Note
If the sauce appears to be curdling or breaking, add a few drops of cold water and whisk briskly for a few minutes to restore the emulsion.
To prevent the sauce from becoming too thick, add 1 tablespoon of cold water along with the lemon juice at the end.
This sauce can also be made in a blender or food processor. Blend the vinegar reduction and egg yolks, then slowly drizzle in the melted butter while blending. Note that a blender may absorb slightly less butter than the whisked method.
Ensure the bottom of the bowl in the double boiler does not touch the hot water, as direct heat can cause the eggs to scramble rather than emulsify.
Hollandaise is best served immediately. If it cools and thickens too much, it can be gently reheated by whisking over low heat with a teaspoon of warm water.
