Ingredients

Directions

  1. Chop leeks into medium-sized pieces and soak them in cold water to remove any dirt.
  2. Drain the leeks thoroughly.
  3. Melt 4 tablespoons of butter in a skillet over medium heat and sauté the leeks for 2 to 3 minutes until soft and transparent.
  4. Add 1 cup of light cream, salt, and pepper to the leeks, then simmer and reduce until the mixture thickens.
  5. Set the leek mixture aside.
  6. Chop the shallots and sauté them in 1 teaspoon of butter.
  7. Deglace the pan with white wine and reduce the liquid until it is nearly dry.
  8. Add the vegetable bouillon and saffron sprigs, then simmer and reduce the liquid by half.
  9. Incorporate the remaining butter slowly into the sauce, whisking continuously until the sauce thickens and becomes glossy.
  10. Blend the sauce on high speed for 30 seconds to ensure it is smooth.
  11. Set the sauce aside.
  12. Sauté the salmon fillets, skin-side down, in a skillet over medium heat until the skin is crisp.
  13. Transfer the salmon to the preheated oven and bake for 5 minutes.
  14. Remove the salmon from the oven and let it rest briefly.
  15. Reheat the leek mixture and the saffron sauce.
  16. Place 2 tablespoons of the leek mixture in the center of each warm plate.
  17. Place a salmon fillet on top of the leeks, skin-side up.
  18. Pour the saffron sauce around the salmon to serve.

Note

Ensure leeks are thoroughly cleaned, as they often trap dirt between layers.

For the sauce, add the butter off the heat or on very low heat to prevent the emulsion from breaking.

If the sauce becomes too thick, thin it with a splash of water or additional bouillon.

Salmon cooking times may vary depending on the thickness of the fillets; ensure the internal temperature reaches 145ðF (63ðC) if desired.
