Description

This vibrant Salsa Tomatillo is the perfect accompaniment to tacos, chips, or grilled meats. Made with fresh tomatillos, serrano chiles, and crisp onion, it offers a balanced profile of tart, spicy, and savory flavors. The key to this recipe is rinsing the tomatillos to remove their sticky, bitter coating, ensuring a clean, bright taste. The addition of fresh cilantro adds a herbal note, while a pinch of sugar balances the natural acidity. Quick to prepare and incredibly versatile, this salsa brings authentic homemade flavor to any meal without requiring complex techniques or hard-to-find ingredients.

Ingredients

Directions

  1. Remove the husks from the tomatillos and rinse them thoroughly under cool water to remove the sticky, bitter milky liquid.
  2. Place the rinsed tomatillos and serrano chiles in the workbowl of a food processor fitted with the metal blade.
  3. Pulse the mixture until the tomatillos and chiles are minced finely.
  4. Add the peeled onion and garlic clove to the processor.
  5. Pulse again to chop the onion and garlic, being careful not to puree the mixture completely if you prefer a chunkier texture.
  6. Add fresh cilantro and pulse briefly to combine.
  7. Transfer the salsa to a bowl and stir in sugar and salt to taste.
  8. If the salsa is too thick, stir in a small amount of water to reach your desired consistency.

Note

For a milder salsa, remove the seeds and membranes from the serrano chiles before processing.

This salsa is best served fresh but can be stored in an airtight container in the refrigerator for up to 8 hours for optimal flavor and texture.

If the salsa thickens during serving, add a tablespoon of water and stir to loosen.

Use firm, green tomatillos for the best tart flavor. Avoid those that are shriveled or have mold on the husks.
