  1. Preheat oven to 425°F (220°C).
  2. Pat the chicken completely dry with paper towels, inside and out.
  3. Season the inside of the chicken cavity with minced garlic, ginger slices, and 1 tablespoon of five-spice powder.
  4. Brush the outside of the chicken with soy sauce, then rub with the remaining five-spice powder.
  5. In a large baking dish, create a mound of salt in the center to act as a roasting rack.
  6. Place the chicken breast-side up on top of the salt mound.
  7. Roast in the preheated oven for 60-90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  8. Remove from oven and let rest for 15 minutes before carving.
  9. Brush off excess salt from the skin before serving.
