Description

This microwave-friendly saltwater taffy recipe offers a fun and simpler way to create classic pulled candy without the stress of stovetop candy thermometers. The mixture of sugar, corn syrup, and butter creates a rich, chewy texture that is both nostalgic and satisfying. While traditional taffy requires precise temperature control on the stove, this method uses the microwave to boil the syrup to the correct soft-crack stage. The key to success is pulling the taffy while it is still pliable but cool enough to handle, which aerates the candy and gives it that signature light, fluffy consistency. Perfect for parties or as a homemade gift, this sweet treat allows for endless flavor variations. Enjoy the process of stretching and folding the warm sugar until it turns opaque and smooth, resulting in a delicious, old-fashioned confection.

Ingredients

Directions

  1. Lightly butter a jelly-roll pan and set aside.
  2. In a 3-quart microwave-safe casserole with high sides, combine sugar, salt, corn syrup, and 1 cup of hot water.
  3. Microwave on HIGH until the mixture reaches a boil, approximately 8 minutes.
  4. Stir the mixture gently.
  5. Continue cooking on HIGH until the mixture reaches 260&# 194;°F (127ðC) on a candy thermometer, which takes about 15 to 20 minutes.
  6. Once the bubbling subsides, stir in the butter, vanilla extract, and desired food coloring.
  7. Pour the hot syrup into the prepared jelly-roll pan.
  8. Allow the taffy to cool for about 5 minutes until it is firm enough to handle but still pliable.
  9. Lightly butter your hands, then gather about one-sixth of the taffy into a ball.
  10. Pull and stretch the taffy repeatedly until it holds its shape in a 1/2-inch thick strand and becomes opaque.
  11. Repeat the pulling process with the remaining portions of the taffy.
  12. Using buttered shears, cut the pulled taffy into 1-inch lengths.
  13. Wrap each piece individually in plastic wrap to prevent sticking.
