Description

This unique International-style sauce combines dark molasses and tamarind extract with a blend of warm spices like cinnamon, cloves, and cardamom. It is simmered with vinegar and wine to create a deep, complex flavor profile. The sauce is aged for a week and strained multiple times for a smooth, refined finish.

Directions

  1. Run all non-liquid ingredients through a spice blender until they are a fine powder.
  2. Place over low heat with half of the vinegar and simmer for 1 hour.
  3. Add the rest of the vinegar a little at a time.
  4. Stir in Tabasco, wines, kitchen bouquet, and coloring.
  5. Cook for 3 minutes to dissolve.
  6. Remove from heat.
  7. Pour into a crock and let stand covered for 1 week.
  8. Strain through cheesecloth six times.
  9. Keeps refrigerated; also freezes very well.
