Description

This vibrant International-style sauce is a bold condiment that balances sweet, sour, and spicy flavors in perfect harmony. Built on a base of rich ketchup and brown sugar, it is lifted by the brightness of fresh orange and lime juices, while tamarind paste adds a deep, fruity complexity. The heat from crushed red pepper and tabasco provides a gentle kick, complemented by earthy garlic and chili powders. Simmered until smooth and glossy, this versatile sauce is excellent as a dipping sauce for fried foods, a glaze for grilled meats, or a tangy accompaniment to sandwiches.

Ingredients

Directions

  1. Place the chopped onion and 1/2 cup of the orange juice into a blender.
  2. Puree the mixture until completely smooth.
  3. Transfer the onion puree to a medium-sized saucepan.
  4. Add the remaining orange juice, catsup, lime juice, cider vinegar, brown sugar, salt, black pepper, dry mustard, crushed red pepper, garlic powder, chili powder, tabasco, tamarind paste, honey, and butter to the saucepan.
  5. Stir well to combine all ingredients.
  6. Place the saucepan over medium-high heat and bring the mixture to a boil, stirring occasionally to prevent sticking.
  7. Once boiling, reduce the heat to low to maintain a gentle simmer.
  8. Simmer uncovered for 25 to 30 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors have melded.
  9. Remove the saucepan from the heat.
  10. Allow the sauce to cool completely before serving or storing.

Note

Storage: Store cooled sauce in an airtight container in the refrigerator for up to two weeks.

Substitutions: If tamarind paste is unavailable, you can substitute with additional lime juice and a splash of balsamic vinegar for acidity, though the flavor profile will change slightly.

Consistency: If the sauce becomes too thick during cooling, you can thin it with a small amount of water or additional orange juice when reheating.
