Description

This traditional German Sauerbraten is a comforting main course featuring tender beef rump roast marinated for days in a blend of vinegars, spices, and onions. The long marination process tenderizes the meat and infuses it with deep, complex flavors. The dish is finished with a unique, velvety sauce thickened with crushed gingersnaps and sour cream, balancing the acidity of the marinade with subtle sweetness and spice. It is an ideal dish for Sunday dinners or holiday gatherings, offering a hearty, savory experience that pairs beautifully with red cabbage, potato dumplings, or boiled potatoes.

Directions

  1. Place the beef roast in a large non-reactive bowl or container.
  2. Add the sliced onions, peppercorns, cloves, and bay leaf to the bowl.
  3. Combine the white vinegar, cider vinegar, and 1 cup of water; pour over the meat to cover.
  4. Cover the bowl and refrigerate for 4 days, turning the meat twice daily.
  5. Remove the meat from the marinade and pat dry with paper towels.
  6. Strain the marinade, reserving the liquid and the onions separately.
  7. Heat vegetable oil in a large Dutch oven over medium-high heat.
  8. Brown the beef roast on all sides until golden brown.
  9. Sprinkle the browned meat with salt.
  10. Pour 2 cups of boiling water around the meat in the Dutch oven.
  11. Crush the gingersnaps and sprinkle them into the pot.
  12. Cover and simmer gently for 1 hour 30 minutes, turning the meat occasionally.
  13. Add 1 cup of the reserved marinade liquid and continue simmering covered for 2 hours, or until the meat is very tender.
  14. Remove the meat from the pot and keep warm.
  15. Strain the cooking juices into a saucepan, discarding solids.
  16. In a small bowl, whisk together the sour cream and flour until smooth.
  17. Stir the sour cream mixture into the hot cooking juices.
  18. Cook the sauce over medium heat, stirring constantly, until thickened and bubbly.
  19. Slice the beef into 1/4-inch thick slices.
  20. Arrange the sliced meat on a heated platter and pour the hot sauce over the top.
