Description

This authentic Sauerbraten is a quintessential German comfort food, featuring a boneless rump roast slowly braised in a tangy vinegar marinade. The key to its distinctive flavor lies in the four-day marination process, which tenderizes the meat and infuses it with aromatic spices like cloves, peppercorns, and bay leaf. The dish is finished with a unique sauce thickened with crushed gingersnaps and sour cream, creating a perfect balance of sweet, spicy, and savory notes. The result is incredibly tender beef served in a velvety, complex gravy, ideal for cold winter evenings or special holiday dinners.

Directions

  1. Place the beef roast in a non-reactive bowl large enough to hold the meat.
  2. Add the sliced onions, peppercorns, cloves, and bay leaf to the bowl.
  3. Pour the white vinegar and cider vinegar over the meat, ensuring it is partially submerged.
  4. Cover the bowl and refrigerate for 4 days, turning the meat twice daily to ensure even marination.
  5. Remove the meat from the marinade and pat it dry thoroughly with paper towels.
  6. Strain the marinade into a separate bowl, reserving the sliced onions and 1 cup of the liquid.
  7. Heat the vegetable oil in a large Dutch oven over medium-high heat.
  8. Brown the meat on all sides until a deep crust forms.
  9. Sprinkle the meat with salt.
  10. Pour the boiling water around the meat in the pot.
  11. Crush the gingersnaps and sprinkle them into the pot.
  12. Cover and simmer for 1 1/2 hours, turning the meat occasionally.
  13. Add the 1 cup of reserved marinade and continue cooking covered for another 2 hours, or until the meat is fork-tender.
  14. Remove the meat from the pot and keep it warm.
  15. Strain the cooking juices from the pot into a large saucepan, discarding solids.
  16. In a small bowl, whisk together the sour cream and flour until smooth.
  17. Stir the sour cream mixture into the hot cooking juices.
  18. Cook the sauce, stirring constantly, until it thickens and becomes smooth.
  19. Slice the meat into 1/4-inch thick slices.
  20. Arrange the meat slices on a heated platter and pour the extra sauce over them.
