Directions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the sausage meat over moderately high heat, stirring and breaking up any larger pieces, until cooked through and browned. Transfer the meat to a fine sieve to drain excess fat.
  3. In the same skillet, cook the minced onion and garlic in the unsalted butter over moderately low heat until the onion is softened.
  4. Add the finely chopped mushrooms to the skillet. Cook over moderate heat, stirring occasionally, until the liquid released by the mushrooms has evaporated.
  5. Add the cumin, allspice, and mint to the mushroom mixture. Cook, stirring, for 2 minutes to toast the spices.
  6. Transfer the mushroom mixture to a bowl. Add the drained sausage meat, softened cream cheese, minced parsley, salt, and pepper. Combine well until evenly mixed.
  7. Unroll the phyllo dough and cover with a damp dish towel to prevent drying while working.
  8. Place 1 sheet of phyllo on a work surface. Brush lightly with clarified butter and sprinkle with 1 tablespoon of bread crumbs.
  9. Lay a second sheet of phyllo on top of the first and brush lightly with more clarified butter.
  10. Cut the stacked phyllo sheets into thirds lengthwise and into quarters crosswise to form 12 squares.
  11. Place a rounded teaspoon of the sausage filling in the center of each square.
  12. Gather the corners of the phyllo over the filling and twist the phyllo gently to seal it, forming a twist shape.
  13. Repeat the process with the remaining phyllo sheets, butter, crumbs, and filling.
  14. Arrange the twists on jelly-roll pans lined with parchment paper.
  15. Bake for 10-12 minutes, or until the phyllo is golden brown and crisp.
