Directions
-
Remove the center vein from the cabbage leaves to make them pliable, ensuring each leaf remains in one piece.
-
Place the cabbage leaves in a shallow microwave-safe baking dish.
-
Cover the dish with vented clear plastic wrap and microwave on 100% power for 1 to 3 minutes, until the leaves are limp and tender.
-
While the cabbage cooks, combine the beaten egg, 1/2 cup of the chopped apple, cornbread stuffing mix, and 2 tablespoons of apple juice or cider in a bowl.
-
Add the bulk pork sausage to the egg mixture and mix well until evenly combined.
-
Divide the sausage mixture into four equal portions.
-
Place one portion of the meat mixture onto the center of each softened cabbage leaf.
-
Fold the sides of the cabbage leaf inward over the filling, then roll up the leaf tightly from the bottom, enclosing the filling completely.
-
Arrange the cabbage rolls seam-side down in a microwave-safe baking dish.
-
Pour the water over the rolls.
-
Cover the dish with vented clear plastic wrap and microwave on 100% power for 12 to 14 minutes, rotating the dish halfway through cooking.
-
Transfer the cooked rolls to a serving platter and cover to keep warm.
-
For the sauce, whisk together the remaining 1/3 cup apple juice or cider, cornstarch, and instant beef bouillon in a microwave-safe measuring cup until smooth.
-
Stir the remaining chopped apple into the sauce mixture.
-
Microwave the sauce uncovered on 100% power for 2 to 2 1/2 minutes, stirring every 30 seconds, until thickened and bubbly.
-
Spoon the warm apple sauce over the cabbage rolls before serving.

Note
Use microwave-safe dishes and wrap. Ensure the plastic wrap is vented or leave a small corner open to allow steam to escape during cooking.
If using fresh sausage, ensure it is fully cooked through. The internal temperature should reach 160F (71C).
Apple variety matters: Granny Smith or Honeycrisp apples hold their shape well during cooking. Softer apples may break down too much.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
For a richer sauce, add a tablespoon of butter or a splash of cream after microwaving.
