Description

This elevated stuffing transforms traditional side dish expectations with the addition of ground poultry and toasted hazelnuts. The combination of savory pork sausage, sweet ham, and nutty bread cubes creates a complex, hearty texture that pairs beautifully with roasted meats. Fresh sage and parsley provide aromatic brightness, while beaten eggs bind the mixture into a moist, cohesive loaf. Perfect for Thanksgiving, Christmas, or any special occasion where you want to impress guests with a homemade touch, this recipe offers a robust flavor profile that is both comforting and sophisticated.

Ingredients

Directions

  1. In a large skillet, cook the crumbled sausage meat over moderate heat, stirring and breaking up lumps, until no longer pink. Transfer to a large bowl and let cool.
  2. Remove white tendons from turkey or chicken fillets with a sharp knife. Grind the fillets coarsely in a food processor.
  3. Add the cooked sausage to the food processor with the ground poultry. Grind until blended, then transfer the mixture to the large bowl.
  4. Pour off fat from the skillet, add butter, and cook onions, celery, and sage covered over moderately low heat, stirring occasionally, until vegetables are softened. Let the vegetable mixture cool in the skillet.
  5. Crush 2 cups of the bread cubes finely in a plastic bag. Add the cooled vegetable mixture, crushed bread cubes, remaining 1 cup of whole bread cubes, hazelnuts, parsley, eggs, salt, pepper, and diced ham to the bowl with the meat mixture. Combine well.
  6. Preheat oven to 350°F (175°C). Transfer the stuffing mixture to a greased baking dish.
  7. Bake for 30-45 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown. Let rest for 10 minutes before serving.

Note

The stuffing may be assembled up to 1 day in advance. Cover tightly and refrigerate. If making ahead, add 10-15 minutes to the baking time to ensure it heats through completely.

For best results, toast the hazelnuts in a dry skillet over medium heat until fragrant, then rub them in a clean kitchen towel to remove the skins before chopping.

Ensure the poultry is completely cooled before grinding to prevent the food processor from becoming clogged or the meat from becoming pasty.

If using day-old bread, you may not need to crush all of the cubes; adjust texture preference accordingly.
